The Palio del Chiaretto is the event that perfectly blends the entire gastronomic and cultural history of Bardolino and attracts thousands of visitors from all over Europe. The pleasant environment of the production area of "Bardolino Chiaretto Doc" is that of the Gardesano territory in Verona, covered with vineyards and olive trees. The grape varieties that contribute to producing Bardolino Chiaretto Doc are: Corvina Veronese 35-65%; Rondinella 10-40%; Molinara, Rossignola, Barbera, Sangiovese, Marzemino, Merlot, Cabernet Sauvignon alone or together.
How is Chiaretto produced? It is necessary to supervise the must to separate it from the skins at the perfect moment of aroma and color absorption. The rosé winemaking of red grapes here is rooted in local tradition and a deep understanding of our grapes' characteristics. It is followed by careful fermentation at controlled temperatures to maintain the characteristic aromas of the grapes. The "Bardolino Chiaretto Doc" sparkling wine made using natural fermentation methods can be designated as "Spumante Brut," the first of its kind in Italy.
