The Palio del Chiaretto is the event that beautifully blends all the historical, gastronomic, and cultural aspects of Bardolino, attracting thousands of visitors from all over Europe. The pleasant environment of the production area for "Bardolino Chiaretto Doc" is the veronese Gardesan territory covered with vineyards and olive trees. The grape varieties that contribute to producing Bardolino Chiaretto Doc are: Corvina veronese 35-65%; Rondinella 10-40%; Molinara, Rossignola, Barbera, Sangiovese, Marzemino, Merlot, Cabernet Sauvignon either alone or together.
How is Chiaretto produced? It is necessary to monitor the must to separate it from the skins at the ideal moment for absorbing the aromas and color. The vinification in pink of red grapes in our region is a product of local tradition and a deep understanding of the characteristics of our grapes. This is followed by careful fermentation at controlled temperatures to maintain the characteristic aromas of the grapes. The "Bardolino Chiaretto Doc" sparkling wine produced using natural fermentation methods can be designated "Spumante Brut," the first of its kind in Italy.
